Begin by pouring 1-2 tbsps. of extra virgin olive oil into a small glass. Cup the bottom of the glass in your hand to warm the extra virgin olive oil and cover the top with your other hand swirling gently to release the aromas.
Bring the tasting cup to your nose and smell the extra virgin olive oil several times noting the aromas.
Now it is time to taste. Take a slurp. As you do so, touch your tongue to the back of your top teeth and inhale. This spreads the extra virgin olive oil in your mouth and helps to release the flavours.
The last step is to swallow the extra virgin olive oil, noting the flavours you are experiencing.
If you are sampling more than one extra virgin olive oil it is best to start with a mild oil; working your way up to robust varietals.
